I was fortunate enough to experience East Alder Table just 17 days after they opened, and it immediately felt like I was stepping into something very, very special. This was not going to be a rushed restaurant experience, or even an awkward communal table you’ve been to before; this was an evening designed to unfold slowly and with exceptional skill in hospitality and in the kitchen. The dining room was beautifully prepared, with a large shared table creating the centerpiece of the experience. Before the first course even arrived, conversations had already begun. We got to know the people sitting around us, sharing stories and discovering that everyone there had come because they wanted to be part of something new.



The chefs were already busy working in the kitchen from the moment we arrived, and I am certain they had been there for hours before guests ever walked through the door. There was genuine excitement amongst guests of watching something being created in real time, and being able to chat with Chef Rock while we got to know one another. We didn’t know precisely what the menu would contain, so there was a great deal of discussion around what we were seeing on the cook top, but the staff was incredibly accommodating to anyone with special dietary needs.
When dinner began, Chef Rock introduced himself and the other chefs, taking time to explain the menu and share the inspiration behind the evening. He was the consummate host. His warm demeanor, knowledge about his craft, and genuine excitement served to welcome everyone into the experience with authenticity.

And then came the roasted chicken.
I have to tell you, I have truly never had a better chicken dish in my entire life. It was the kind of dish that makes the whole table go quiet because everyone is too busy taking another bite. Chef Rock somehow managed to render the skin until it was perfectly crisp while keeping every bite impossibly juicy. And then there was the sauce. Oh, the sauce. Made from the pan drippings, it was rich without being heavy, layered with flavor, and honestly one of the most magical sauces I’ve ever tasted. It is a dish I have thought about more times than I’d like to admit since coming home. In fact, last night I made an attempt to cook it myself and quickly realized I just need to make a trip back.
People often think the most impressive dishes are the ones with dozens of ingredients or elaborate presentations, but I couldn’t disagree more. Some of the greatest cooking comes from doing something seemingly simple absolutely perfectly, and chicken is one of those dishes. There is nowhere to hide. If it’s overcooked, you know. If it’s under-seasoned, you know. It takes confidence, restraint, and incredible technique to transform something so familiar into something unforgettable. Chef Rock and his team did exactly that. They respected the ingredients, let them shine, and created dishes that were comforting, elegant, and completely unforgettable.
As incredible as that chicken was, what has stayed with me even more is the feeling of the evening itself. East Alder Table isn’t trying to be just another restaurant on Walla Walla’s already impressive dining scene. It feels like something much bigger. It’s a place where strangers become dinner companions, where chefs step out from behind the kitchen to share the stories behind each course, and where every ingredient is treated with the respect it deserves. You don’t simply sit down for dinner and leave. You become part of the experience.
