NEW! Fireweed is a standout for thoughtfully crafted baked goods made with quality ingredients, serious pastry technique and plenty of creativity. Owner and pastry chef Lynette Pfleuger is deeply passionate about her craft, and you can see that attention to detail in everything coming out of the kitchen. The menu rotates regularly, balancing beautifully executed classics with flavors that feel fresh, seasonal and just a little unexpected, which means this is absolutely a bakery worth checking in on often to see what’s new. Their signature canelé is utter perfection, and I genuinely can’t stop thinking about it. The deeply caramelized, crisp exterior gives way to a soft, custardy center with the ultimate crumb and just the right amount of chew. It’s one of those deceptively simple pastries where technique is everything, and Fireweed nails it. The chocolate chip cookie was especially life-changing, with exactly the kind of texture and rich, buttery flavor that makes you wonder why every chocolate chip cookie can’t taste like this.

What I especially love about Fireweed is that there isn’t a single item in the case that won’t delight you. The rotating selection makes choosing genuinely difficult, with sweet and savory options, expertly laminated pastries, cookies, biscuits and seasonal creations that showcase just how much thought is going into the menu. Everything feels intentional without becoming overly precious, and that’s exactly the kind of bakery we love to see opening in Spokane: technically excellent, creative, ingredient-driven and still completely approachable. Fireweed is a delicious addition to Spokane’s ever-growing bakery scene, and everything on the menu is next-level, so you’ll never be led astray.

TNW Recommendation: The biscuits are an absolute must-try, especially the Everything Bagel Biscuit with cream cheese. Boots Bakery

Located inside Saranac Commons in downtown Spokane, Boots Bakery & Lounge has been proving since 2012 that plant-based and gluten-free food can be every bit as decadent, comforting and downright fun as anything else in the pastry case. Everything is made from scratch, and the selection changes constantly, which means you might find gooey cinnamon rolls, thick chocolate brownies piled high with frosting and toppings, chewy ginger cookies, cupcakes or one of their wildly creative rotating desserts alongside longtime favorites like their absolutely unreal pumpkin waffle (that happens to be gluten-free). And Boots doesn’t stop at sweets. The colorful savory case might hold creamy mac and cheese, curried lentils, smoky paprika yams and greens, buffalo cauliflower and chickpeas, roasted vegetables, German potato salad, corn fritters or whatever else the kitchen has dreamed up that day. Dear CoCo

Located in the heart of downtown Spokane, Dear CoCo is equal parts bakery, coffee shop and beautifully layered little escape, with exposed brick, sumptuous velvet seating, vintage treasures and European-inspired details that make the entire space feel collected rather than decorated. The bakery case is reason enough to stop, filled with flaky croissants, cinnamon rolls, bright lemon bars and their famously enormous pistachio croissants, but don’t overlook the savory side of the menu. Think warm biscuits slathered with jam, thick slices of bread and toast, seasonal quiche, comforting bowls of soup and other thoughtfully made café fare alongside locally roasted coffee. Even their bread pudding gets the CoCo treatment, made with buttery laminated croissants rather than ordinary bread for an extra-rich, custardy bite.

But what we really love about Dear CoCo is that it doesn’t feel designed to rush you back out the door. Known for beautifully decorated custom cakes and cookies, this locally owned Spokane bakery is just as tempting when you’re stopping in without a celebration on the calendar. The case offers plenty of reasons to make an ordinary morning a little more interesting, with cinnamon rolls, pastries and rotating treats alongside their popular cake parfaits, which give you all the layers of cake, frosting and filling without having to explain why you bought yourself an entire cake. Although, to be clear, we would support that decision too.

These beautiful desserts show up at birthdays, weddings, graduations, office parties and family celebrations year after year and everyone will ask you, “Where did you get THIS?!” Their cakes are the best tasting in town – they’re made from scratch with ingredients like real butter, whipping cream, sour cream, pure chocolate and fresh fruit, and the selection goes well beyond the standard chocolate-or-vanilla decision. Depending on the day, you’ll find slices of layer cake, cheesecakes, cupcakes, cookies, lemon bars, truffles and other rotating desserts waiting in the case, making this just as good a stop for an afternoon sugar emergency as it is for ordering the centerpiece of a major celebration.

They are known for their rock-solid consistency with a side of nostalgia. Packed with cozy apple flavor and finished with rich, buttery salted caramel, it tastes like everything we love about fall in the Inland Northwest turned into a cake. Known for beautifully decorated cupcakes, cakes, cookies and other sweet treats, Sweet Frostings leans fully into the fun side of baking. The cases are filled with colorful frosting swirls, sprinkles, seasonal flavors and elaborately decorated creations that feel celebratory even when there isn’t technically anything to celebrate. Cupcakes are the star here, with a rotating assortment of flavors alongside familiar favorites, but you’ll also find cookies, cake pops, macarons and other grab-and-go treats depending on the day. It’s polished and playful without taking itself too seriously, and the shops themselves carry that same cheerful personality. This is the place to stop when you want dessert to feel like an event, even if the event is simply surviving the week.

The chocolate raspberry offers a rich, chocolatey bite with a fruity twist, while the carrot cake is a classic choice with plenty of cozy spice and sweetness. Both are worth adding to your order, especially if you’re having trouble choosing just one!

miFLAVOUR

Walking into miFLAVOUR feels a little like stumbling into a jewel box of French pastry in the middle of Spokane. The cases are packed with glossy, almost impossibly beautiful mousse cakes, jewel-toned fruit tarts, delicate pavlovas, deeply caramelized kouign-amann, buttery croissants with hundreds of whisper-thin flaky layers, and rows of colorful macarons in flavors ranging from wild huckleberry and salted caramel to raspberry cheesecake and lemon. Everything feels meticulous, from the tiny handmade garnishes to the perfectly piped fillings and mirror-like finishes on their individual cakes. Owners Max and Ella Piskun took inspiration from the patisseries of Paris, and you can see it immediately in the attention to detail. This is pastry that is meant to be admired for a minute before you completely destroy it with a fork, and we mean that as the highest compliment.

But miFLAVOUR isn’t all style and no substance. Their pastries and desserts are made from scratch, and that extra effort comes through in the textures and flavors: crisp, buttery layers giving way to tender croissant centers, chewy-crisp macarons wrapped around silky fillings, rich chocolate balanced with bright fruit, and mousse cakes that somehow manage to feel decadent and feather-light at the same time. Add house-made Volonti gelato and sorbetto, crème brûlée, cakes, coffee and an ever-changing pastry case, and this is the kind of place where coming in for “just one thing” becomes nearly impossible. Our recommendation? Go early, order more than you think you need, absolutely get the kouign-amann if it’s in the case, and bring someone willing to split everything. miFLAVOUR is polished without being pretentious, playful without sacrificing technique, and one of those distinctly Spokane spots that can turn an ordinary Tuesday afternoon into an occasion.
